Chicken Adobo

This is the first Filipino dish that I learned to cook. When I left the Philippines to work here in Dubai, my cooking skill was limited to frying eggs and sausages. I survived by eating out for some time then eventually had to learn how to cook. Chicken Adobo is the easiest dish to prepare. I used to just put all the ingredients in the pot and let it cook on low fire for half an hour.

Then I learned to tweak it to my taste. However, I do not have exact measurements of the ingredients. Tancha tancha lang! 😄


  1. Cooking Oil
  2. Whole Chicken cut in small parts
  3. Garlic and Onions
  4. Soy Sauce
  5. Vinegar
  6. Oyster Sauce
  7. Worcestershire Sauce(optional)
  8. Salt and Pepper
  9. Maggi Chicken Cubes
  10. Bay Leaves

Cooking Steps:

  1. Marinate Chicken with a little bit of Worcestershire sauce
  2. Fry Chicken until golden brown then set aside
  3. Sauté onions and garlic, then add chicken cube
  4. Add soy sauce, vinegar and a little bit of oyster sauce. Bring to a boil.
  5. Add Fried chicken and bay leaves in the pot. Let it simmer in the sauce
  6. Add Salt and Pepper to taste
